You cant actually select a race but each profession has its own unique appearances. You can click on the "Professions" button at http://guildwars.com/ (http://guildwars.com/) and find some very useful infomation.

can you still customize your appearance like hair style, skin colour ect

Skin color, hair color, hair cut, face, and height are all customizable.

Don't forget, you can use "dye" to change the colors of your armor, pants, gloves, boots and helmet. What's even cooler, you can dye your weapons!! I love my blue bow.
